Emma's blog "Food Coma" is one of my favorites because I feel like I would be able to pull off her recipes or, invent new ones with the ideas & pictures she shows :) Her personality and humour also comes through in her writing and she takes beautiful food photos! I like how Emma doesn't make cooking overly complicated (aka. making mayo from scratch for a sandwich), that's what I need and want-- let me buy the stuff, put it together with love, know it's tasty and enjoy!
This recipe made me want to try my own naan bread pizza with pesto sauce and I came up with this pizza :) I've made it three times, it's so good!
- Naan Bread (didn't bake my own = proud step-skipper!)
- Pesto or Pizza Sauce
- Thinly Sliced Genoa Salami (optional)
- Vine Ripe Tomatoes
- Shredded Cheese (I used 2 yr old aged white cheddar)
- Sliced Olives (optional)
- Fresh Basil
- Balsamic Vinegar
1. Spread pesto or pizza sauce on your naan bread.
2. Layer thinly sliced genoa salami and sliced vine ripe tomatoes. Not too tight.
3. Sprinkle cheese on top. Full coverage isn't necessary, just enough for flavor and to hold things together.
4. Place a few fresh basil leaves (whole or chopped) on top and sprinkle with balsamic vinegar.
5. Bake at 350 degrees for 10-12 minutes or until cheese melts.
Tip: One of the times I made this, I put too many toppings on and it didn't cook as well. Was kinda soggy. I suggest two or three toppings max, plus cheese, etc.
