This is one of my fave go-to recipies, especially in the summer! Keith and I love cooking together on Sundays and each have our favorite roles-- mine are cutting, marinating, casseroles and oven stuff... Keith's are cooking, saucing, meat and bbq. Then, we both love eating it and Keith asks me to rate the meat. Lol.
The cheese, onion and sour cream make an amazing lemony flavor that defines summer in one bite! And please ignore the burnt edges, I oppsied. Hope you enjoy :)
You will Need:
- 5 large potatoes
- 2cups Shredded Cheddar Cheese
- 500ml sour cream (the medium container)
- 2T. butter or margarine
- Medium Onion, diced (i hate onions but they're amazing in this recipe)
- Salt and Pepper
7/ Pour cheesey combo on top of potatoes, working it into the cracks (I shimmy mine to wiggle it down). OR, you can fold the cheesey combo with the potatoes, then add it to the casserole dish. Lick the spoon... it's so good!
ps. The leftovers taste even better the next day!!
